Mangoes are Here!

We crawled up on our office roof today and fetched 168 mangoes!  We learned how to make a batch of juice this morning and have several other lovely cooking ideas.  These fresh mangoes help to beat the heat.

If those are the annoying stringy kind, do post that juice recipe so we can make use of our office's two trees as well.

Mangoes From Heaven:

I flew in last night and had the opportunity to partake in Cassie's Mango harvest. It is amazing, the mangoes just keeps on falling - almost as if they are falling from Heaven. The Mangoes are sooo delicious.

Kyle...our mangoes do have some strings, but not terrible. Our recipe is as follows:
-peel the mangoes and put into pan with 8ish cups of water
-put on stove and bring to boil, boil until the mangoes breakdown some
-allow to cool
-place in blender
-add sugar if needed
-serve over ice

*the blender may help with the strings

Kevin here,
I also wanted to add this idea,
get the biggest stock pot you can
put in about 4 cups of water and about 1/2 cup of sugar
peel 60 mangoes and boil them down
after it cools squeeze out each pit and discard
continue to boil down
makes an excellent syrup
we have about 2 gallons of it ready to go into the freezer right now!
